Healthy lunch here we come! A vital part of eating a more healthy, balanced vegan diet for me has been embracing meal prep. I have a busy working life in a high pressure job so the last thing I want to do when I get home is spend hours slaving away in the kitchen.
Luckily meal prep done right can save you tonnes of time. One of my favourite healthy lunches to make ahead are salads in a jar. Making a week’s worth can take as little as ten minutes depending on what ingredients you use. My default recipe usually takes me 45 minutes as I like to use roasted veg and quinoa in mine. But you can use pretty much everything.
These can keep for 5 days in the fridge so preparing them on a Sunday is your best bet. Fill them with anything you like but I usually make mine a mix of grains, beans, vegetables and a healthy fat.
Put your dressing on the bottom to avoid making the other ingredients soggy.
So here’s the order and ingredients I use to assemble my healthy lunch salads.
- Cannellini beans
- Roasted sweet potatoes, peppers and broccoli
Then when I’m ready to eat I just shake the jar to mix the ingredients together and pour into a bowl. Tasty, filling and easy to prepare.
