Have I got a great recipe for you today. These are my delicious healthy vegan chocolate brownies. They are the perfect texture soft on the inside and crispy on the outside. The nuts and chocolate add a lovely texture and would you believe there’s actually courgette in these (don’t worry you can’t taste the courgette). Or zucchini for my American readers. Isn’t it odd that we have different words for certain foodstuffs despite the fact both countries are English-speaking. You could of course replace the courgette with grated carrot or even grated sweet potato. It is a great way to sneak more vegetables into your diet.
To avoid the inclusion of high calorie granulated sugar I’ve used Candarel’s granulated sugar replacement in my healthy vegan chocolate brownies. Less than 2 cals per teaspoon and a little goes a long way. Less than 40 grams used for 20 servings. You could of course replace Candarel with agave nectar, maple syrup or coconut sugar. It is entirely up to you!
